Exclusively selecting the finest agaves, his expertise releases a bou- quet of floral, perfumed, and spicy aromas. Sourced entirely from San Luis Amatlán, our Espadín Capón is a mezcal that capti- vates the senses.

  • Noble Coyote Tobalá and Espadín Mezcal form a distinctive blend, offering an unparalleled tasting experience that marries sophistication with artisanal tradition. Derived from the largest variety of the agave Tobalá in Oaxaca’s San Luis Amatlán region, these mezcal expressions stand out with Tobalá plants reaching impressive heights of 1.0 to 1.5 meters. Often used as ornamental elements in Oaxaca, Tobalá is celebrated as the “king of the agaves,” thriving in shaded, rocky terrains at altitudes of 1200 to 2300 meters. This mezcal encapsulates both the natural elegance of Tobalá and the meticulous craftsmanship of Noble Coyote.

    Jabalí, considered the most exotic of mezcals, thrives in Oaxaca’s mezcalero strip. Despite its abundance, only a select few maestro mezcaleros, including José Santiago, possess the expertise to navigate Jabalí’s intricate distillation process. Named after the wild boar, Jabalí’s challenging nature, marked by foam production and lower sugar content, demands three to four distillations. Santiago’s mastery and ancestral knowledge converge, resulting in a mezcal that epitomizes tradition and expertise.

  • The aroma boasts herbal scents, with a subtle hint of smoky bacon fat. On the palate, the mezcal unfolds with complex notes of slate, mint, toffee, and oriental spices, all harmonizing with a mineral undertone.

CANNABIC ESPADÍN

A TRIBUTE TO THE SUBLIME

  • Noble Coyote’s Cannabic Espadín distin- guishes itself through a meticulous third distillation process, a refinement method that integrates a traditional recipe featu- ring orange and cannabis, executed within a bespoke still. In contrast to the conven- tional Espadín, typically subjected to a dual distillation, this trinary approach amplifies the subtleties of flavors, remarkably eleva- ting the inherent notes of the agave.

    It is imperative to underscore that, whi- le cannabis is an integral element in this blend, its active components dissipate during distillation due to the temperature used in the process. This means that Noble Coyote’s Cannabic Espadín offers solely the flavor of the sacred plant, without incu- rring in its psychotropic effects.

  • The aroma of this mezcal orchestrates an aromatic symphony, unfolding notes of ear- th, soursop, and banana. On the palate, nuances of mint and the gentle floral em- brace of jasmine are unveiled; culminating in an effervescent aftertaste that imparts a fresh and vibrant trace on the palate.

Crafted from the distinctive agave Americana L., thriving primarily in the Amatlánes region of Oaxaca.

    Esteemed maestros mezcaleros unanimously regard the Coyote agave as an elusive maguey, akin to the spirit of a “coy te,” hence its fitting namesake. Employing a semi-cultivated re-growing method, our spirit pays homage to the agave’s cultural significance in North America, celebrated for its intelligence, ferocity, and boldness. Sourced from the ancestral Mezcaleros community of San Luis Amatlán, our libation reflects a rich tradition steeped in the artistry of mezcal craftsmanship.

  • The aromas of this mezcal are as eccentric as the DNA of the agave and are reminis- cent of white pepper, marzipan, vanilla and wood with spicy notes, which are underli- ned by the rocky soil and mineral notes.

  • Agave Jabalí, deemed the most exotic of Mezcals, flourishes in Oaxaca’s mezcalero strip. While relatively abundant, its secret processing is known to only a select few maestros mezcaleros due to its challenging foaming nature and lower sugar content, necessitating three to four distillations. The name “Jabalí,” meaning wild boar, is derived from its pointed, curved leaves resembling wild boar teeth. Our Mezcal Jabalí is a rare and mystical creation, a testament to the craftsmanship of our maestro mezcalero José Santiago, who, steeped in tradition and generational knowledge, has mastered the secrets of the Jabalí agave.

  • Jabalí agave offers an evocative blend of lemongrass, aniseed, eucalyptus, and her- bal aromas, coupled with a nuanced smo- kiness and a subtle petrichor scent. Slate, mint, and oriental spices grace the palate, accompanied by a smooth, mineral and elegant finish.
